Our Story
Hello! I'm Dr. Erica E. Watson, and I'm happy to "meet" you (however I certainly look forward to talking with you live). I am a doctor of health science in both clinical health and clinical nutrition, and I'll be a Diplomate of the American College of Lifestyle Medicine in 2025. I have a masters degree in biology and a graduate certificate in emerging infectious diseases. I'm also a certified nutrition coach, and I'm trained in trauma-informed learning and care.
When I was growing up I planted, climbed, and yes, hugged a lot of trees. I was known for being "wise beyond my years." This is where we get the title for "WiseTree Health Connections." I discovered at a young age that I had a good eye for understanding disease processes, and for addressing concerns. I also had this really natural way of fully supporting and encouraging others, so as an adult I pursued science, health, and medicine. I truly enjoy discovering what needs attention, then collaborating to create ways to address those needs.
I thrive on helping people by using nutrition as a tool for health and healing, and by offering my strengths as a provider, a scientist, and an educator. These tools took more than a decade of development, education, and leadership, and I get to share them with you now. Today I invite you to work with me for your best health outcomes. What is Clinical Nutrition?
Nutrition = set of complicated processes by which we break down food for the nutrients that we need
Many of today’s major health problems - high blood pressure, type 2 diabetes, overweight/obesity, stroke, cancer, and a host of other conditions - often come from poor nutrition. Sometimes we just want to feel better overall. Clinical nutrition addresses disease prevention and health maintenance by providing guidance and care for optimal eating, drinking, and thriving, all while integrating very specific health measures. This unique approach is modified to meet your unique needs for overall improved wellbeing.
Improving nutrition is an ongoing process. We will first meet to assess your needs, then we will work together to create plans and discuss options. It’s important to know that you are the best guide for your own health, because you know you better than anyone else does. I will provide information, educational materials, support, and follow-up care tailored for just you.

November Thoughts
This month, perhaps consider trying 1 totally new meal per week. It could be purple sweet potato drizzled with sesame oil for week 1; field peas with coconut milk and spices on week 2; fufu with stewed okra for week 3; and sliced jicama with salsa, corn tortillas, and avocado for week 4.

Recipe:
Dr. Watson’s UPDATED Collard Greens
Use an entire bag of pre-chopped, organic collard greens - or - rinse, destem, and finely dice 1 bunch of collard greens (image of full-leave greens above, on left). Slice a container of mushrooms - doesn't matter which kind or how much. Heat up a pot to medium-high then add the greens, 2 sliced white onions, mushrooms, and a handful of cherry/similar tomatoes. There are no added oils or salts in this recipe.
Once you smell an aroma developing, add in 1/2 water to keep everything from from burning; use that water to deglaze the pot in fact. We do want the mushrooms to toughen, and the tomatoes to burst. Cook for about 8 minutes, then add 2-10 (yes!) cloves of garlic, a lot of red pepper flakes, and 1-2 tsp (or more) smoke flavoring. Cook until the greens are done, about 10 more minutes minutes. Eat as much as you want, alongside your other meal options!

More than 20 years of curriculum training, modifications, and design give me the technical background to create effective learning for students. However, my experiences in equity, empathy, and belonging, alongside medical, health, and science training are what make my tailored curriculum models a best fit for your school. I incorporate explicit objectives and teaching tools that will best support your educators and students for critical and necessary equity- and empathy-based learning.
An educator, a speaker, and a provider, I can also teach or present for you or your organization, or provide learning sessions. We can schedule an in-person, a virtual, or a combined event.
Mentoring is one of my passions, and with 25 years as a mentor, I would love to work with you whether you're in college, medical school, residency, graduate school, STEM or social-emotional courses, or a professional role.
